6 Egg Spinach & Mushroom Omelet

I should probably start a page with recipes I've found (or made up) that are really tasty, super easy to make and really healthy.  This is one of my favorite breakfasts.  A 6 egg omelet on the surface sounds like a ridiculously big meal.  Granted, it's a decent amount of food, but when looking at the nutrition particulars, it's a great healthy meal high in protein, moderate calories and low in carbs and fat.  Here's the nutrition break down:

Ingredients:
  • 6 eggs
  • 2oz mushrooms
  • 2oz spinach
  • Onion
Note on eggs:  If you can, get cage free, antibiotic and hormone free, free range, and all that other stuff they claim eggs.  Get them from a local farmer's market if you can.  I'm not an organic freak and don't pay extra for organic chicken because it's significantly more expensive, but with eggs the cost difference is minimal and I've found they really taste a LOT better.  This is important here because I'm only using 1 whole egg and we all know the yolks taste the best.

Preparation:
1. Start by cracking the 5 egg whites and 1 whole egg into a bowl and mix them up well.  Go ahead and mix them now because the other stuff cooks real quick.

2. Chop 2 ounces of mushrooms (3-4) and onion.  I buy pre-chopped onion for convenience.  Put a little olive oil into a pan and heat it just until it begins to smoke.  Toss in the onion and diced mushrooms and stir them around a bit until the onions become translucent.


3. Toss in 2 ounces of spinach.  Depending on the size of the leaves, you might want to tear them up a bit before putting it in the skillet.


4. Once the spinach cooks down a bit, pour in the eggs and mix together.


5. Plate and season to taste.  I like some ground sea salt, ground pepper and green Tabasco.


I suppose to call this an "Omelet" is a stretch.  It's really scrambled eggs with onion, mushroom and spinach, but six of one, half dozen of another.  It's a great tasty meal and only takes a few minutes to make.  Clean up is a matter of rinsing out a non-stick pan and washing the spatula.
